PROBIOTIC KEFIR BIRCHER MUESLI RECIPE WITH PREBIOTIC PISTACHIO NUTS AND KIWI FRUIT
Yield 4 helpings
- For the bircher muesli
- 250ml kefir milk
- 2 apples (medium sized, any dessert apple)
- 1 cups medium porridge oats (not instant cook)
- For the kiwi & pistachio topping
- 4 ripe kiwi fruit
- 2 tbsp unsalted pistachios, shelled, chopped finely
- To serve
- runny honey
- 1 tsp orange or lime zest (optional)
Prepare the bircher muesli up to 1 day in advance.Pour kefir on top of the oats. Grate the apples on the coarse face of a cheese grater (keep the skin on for extra colour & fibre) and tip into the oat mix. Stir thoroughly to combine.Refrigerate for at least 1 hour or overnight.
Serve the kefir bircher muesli in individual bowls.Peel the kiwi fruit & slice into 2mm rounds. Divide the kiwi slices between the bowls & sprinkle over the chopped pistachio nuts.Drizzle over runny honey & orange or lime zest (if using) to taste.
