This fast & filling prebiotic asparagus recipe blends the aniseed notes of caraway seeds with the bright taste of probiotic greek yogurt, to cut through the richness of the mackerel & avocado.
You can throw this recipe together in 5 minutes for a satisfying lunch for one, or double / triple the quantities to make a more substantial salad.

Ingredients
- 70g asparagus
- 1/2 medium avocado
- 3 tbsp greek yogurt
- 1 tsp caraway seeds
- 1 smoked mackerel fillet
- to serve
- 1 lemon wedge
- freshly ground black pepper
Instructions
Snap off or cut the tough bases off the asparagus spears. Steam or boil until tender to a knife tip.
Meanwhile, peel and cut the avocado into thin wedges
To serve, lay the warm asparagus and avocado wedges on a plate. Flake the mackerel in bite sized pieces on top. Dollop over small spoonfuls of yogurt and sprinkle the caraway seeds over.
Grind over a twist of black pepper and squeeze over some lemon juice.
